Coconut Flour Cookies

My favorite fruit and ingredient in food is coconut. I love coconut water, coconut nibs, coconut milk and the list goes on. I also love to make healthy desserts and find ways to curb my cravings for refined sugar. Here’s a great recipe on how to make delicious and fluffy coconut flour cookies.

Here’s what you will need for this recipe:

  1. 1/2 cup of almond butter (or peanut butter if you like, but I prefer almond)

  2. 1/2 cup of coconut flower

  3. 1/2 cup of coconut sugar

  4. 2 tablespoons of coconut oil (liquid form)

  5. 2 large eggs

  6. 1/2 teaspoon of baking soda

  7. 1.5 teaspoon of vanilla extract

  8. 1/4 teaspoon of cinnamon

  9. 1/4 teaspoon of kosher salt

  10. 1 teaspoon of raw cacao powder

Equipment used:

  1. food processor/blender

  2. baking dish

  3. aluminum foil

  4. scoop spoon

Let’s get to work:

  1. Preheat the oven to 350F.

  2. Line the baking dish aluminum foil or parchment paper

  3. Get the food processor out, add in the coconut oil, almond butter and coconut sugar. Process on low until smooth.

  4. Add the 2 eggs and vanilla extract. Process again until smooth.

  5. Add coconut flour and sprinkle cacao powder, baking soda, cinnamon and salt. Process until smooth. The mixture will have a smooth doughy consistency and darker look due to the almond butter and the cacao.

  6. With a scoop spoon, scoop up one spoonful of dough and place it on the baking sheet. Use your fingers to shape the cookie - flatten it and round the edges. Moisten your fingers with water if the cookie dough starts to stick.

  7. Bake for 8 minutes at 350F. The cookie dough will rise and cookie size will expand.

  8. The cookie should be slightly dry on the outside and soft/fluffy on the inside.

  9. Let the them on the baking sheet for 5-10 minutes.

  10. Place them on a dish and enjoy!!
